Christian Puglisi, a Michelin star in Copenhagen at Relae Restaurant
Born in Sicily- Messina – adopted Danish-Italian Christian Puglisi, class 1982, meets his great love in Denmark: cooking. Experiencing with different stoves and recipes, Puglisi left famous two Michelin stars Noma restaurant in Copenhagen -in which he was hired as a sous chef for Rene Redzepi – to land in France, at the Parisian Le Petit Bofinger.
Back to Copenhagen, in 2010, he decides to start a new venture opening his restaurant in collaboration with sommelier Kim Rossen.The Relae – located in the earth of one of the most trendy area of Copenhagen, Nørrebro, has a high – wood impact to the eye due to the absence of tablecloths. Street art pieces on exposed brick walls cooperate in rendering a casual, rustic look.
Dishes employ few ingredients that call to mind the chef’s Sicilian origins, like olive oil, pistachios, and Sicilian lemons, but Piedmont region white truffle is also on the list, with prime fresh season produce as good pairs. Menu choice for different clientele tastes with meat, fish or vegetarian menus, each menu rendered in four courses. Noteworthy finger food appetizer is the topinambur, cut in a half and grilled in hazelnut butter dressing.
Self-serve for the cutlery, right under the table like an informal dinner at home. Worth to mention are this restaurant Sustainable Award 2015 and 45th place in San Pellegrino World’s 50 Best lists.
Relae received one star Michelin in 2013
