Viviana Varese becomes Expo chef Ambassador
Let’s talk again of our beloved Viviana Varese becomes new Ambassador for Expo Milan 2015. In few years, the starred chef of Alice restaurant (piazza XXV Aprile in Milan, at Eataly) has had many reasons to feel satisfied: the Identità Golose award for the best woman chef in 2010 and the Michelin star in 2011, to begin with. As ingredient for Expo 2015, Viviana Varese chose blue fish, the symbol of her cuisine and protagonist in her restaurant Alice. She says: “I am convinced the blue fish is the most democratic and affordable. It is also very healthy and rich in Omega 3. There are many varieties of blue fish, it is very easy to cook and I assure you there are extraordinary recipes you can make with it.” The Universal Exposition will give Italian cuisine the great opportunity to be appreciated beyond stereotypes: “We are known in the world only for spaghetti and pizza while we have a lot more to offer”.
Viviana Varese has worked in the most important European and American restaurants. Expo 2015 means for her also dialogue and solidarity: “The Universal Exposition will be surely the occasion to exchange ingredients as well as culture, I believe that around a table it is possible to find peace among all nations.”
