“If Paradise has no chocolate I don’t want to go”. It’s difficult to blame the “king of chocolate” Ernst Knam, who –since 1992- creates sublime delights in his historic Milanese pastry shop at 10 Via Anfossi. Born in 1963 in Germany, the Maitre Pâtissier arrived in Italy and immediately became a pastry chef for Gualtiero Marchesi, who defines him crazy as only artist could be, but capable to create real masterpieces.  For 22 years, originality in presenting unusual combination of ingredients has been the distinctive feature of his pastry shop. Following the seasonal food, his unmistakable skills offers unique interpretations of chocolate, spices and fruit. Knam is also protagonist of a TV show on Discovery Italy , King of chocolate (now at its third edition), entirely dedicated to his incredible chocolate desserts. His culinary creations has received many international awards. Ernst Knam is passionate of creativity in all its forms, and his creations are often inspired by design, fashion, architecture and art. Fashion designers like John Richmond and Cesare Paciotti only claim him for the Milan Fashion Week. He is the only Maitre Pâtissier chosen as Expo 2015 Ambassador, so increasing the international opinion leader network ready to spread the Universal Expositions themes. And it’s right for the next spring worldwide Expo that the pastry master Chef (together with architect and designer Lorenzo Palmeri), has created the chocolate sculpture titled “Home (is where I want to be)” clearly inspired to Milan main cathedral, il Duomo.
